The Cerrado is a vast ecoregion that spans across more than 20% of Brazil’s landmass, the second largest after the Amazon rainforest. Within the tropical savanna is one of the world’s most diverse ecosystems, and the area’s distinct seasons cultivate high-quality coffee with unique characteristics.
Coffee from Cerrado is so exceptional that it was granted Brazil’s first “Designation of Origin'' status. Only coffee grown within the Cerrado Mineiro region at altitudes between 800 and 1300masl, among other strict production criteria, can be labeled as Cerrado coffee. Traceability, quality, and diversity of flavors are some of the factors that have earned this special area its status as a valuable producing region in Brazil.
Our Brazil Cerrado Semi-Washed 2021 was first de-pulped to remove the outer cherry skins. Some mucilage was left on the beans to ferment for a short period before it was laid out to dry.
The semi-washed process encourages excellent sweetness and body in the cup while preserving the distinctive nutty and chocolatey notes paired with citric acidity and a sweet aroma. These influences from Cerrado’s rich terroir truly set this coffee apart from the crowd of exports from Brazil – and with an annual production that supplies over 33% of the world’s coffee, that’s saying something.
